Squash Pie Recipe for your Holiday Feast

When eating healthy is your priority you become creative in the kitchen.  This delicious recipe is reminiscent of a traditional Jewish recipe of noodle kugel.  Enjoy it as part of your Passover or Easter feast this coming week.  HAPPY HOLIDAYS!

Spaghetti Squash Bake

1 13.5 oz full fat coconut milk
1/4 c honey
6 tablespoons coconut flour
2 teaspoons baking powder
1/4 teaspoon seasalt
4 large eggs
1 teaspoon vanilla extract
11/2 cups cooked spaghetti squash
Unsweetened coconut flakes sprinkled on top

Preheat oven 350 degrees

Put all ingredients except the squash and coconut flakes into the blender.  Blend until smooth.  In the meantime, put the spaghetti squash into a greased baking dish and pour the ingredients over squash.  Sprinkle coconut flakes and bake about 45 minutes.
